As many of you know I like to throw people some curves when it comes to pairings and this is one of those times. I decided to pair a Sparkling Aussie Red with a slow cooked Pork Tacos.
This full-bodied Aussie Sparkling Shiraz is an intense but flavorful deep purple red wine that happens to be sparkling. Lots of fruit forward with Black Cherry & Black Berries with cocoa and licorice on the palate, with hints of vanilla and medium finish.
Normally I would tell you to pair tonights dinner with a Pinot or lighter-bodied red wine or for a medium bodied white like a Chardonnay and Viognier or even a Riesling.
Because of the beautiful fruit forward of this wine and its a sparkling this shiraz really changes things up to pair well the Pork tacos.
Robert Parker rate this a a 90, while I will rate it 88-89. very good wine and paired beautifully.
