Temperature is the quiet conductor of flavor — serve it right, and every note of your wine sings in harmony.

One of the most overlooked aspects of wine enjoyment is temperature. Even the finest wine can seem flat, harsh, or unbalanced if it’s served too warm or too cold. The 20/20 Rule is a simple and elegant guide to ensure your wine shows its true character — exactly as the winemaker intended.

For Red Wines

If your red wine isn’t stored in a temperature-controlled wine fridge (ideally around 57°F / 14°C), it’s probably sitting at typical room temperature — often too warm for optimal flavor.
To correct this, place your red wine in the refrigerator for 20 minutes before serving.
This brief chill helps tighten up the structure, balances the alcohol, and allows the fruit and acidity to shine through without any “heat” on the palate.

For White Wines

White wines are often served straight from the fridge, which is typically around 37–40°F (3–5°C) — far too cold for delicate aromatics and texture.
To allow those beautiful aromas and flavors to bloom, take your white wine out of the fridge about 20 minutes before serving.
As it warms slightly, you’ll notice the bouquet expand, the mouthfeel soften, and the true expression of the wine come alive.
